It’s a very easy recipe, very yummy snack/ breakfast which can be prepared with your leftover chicken gravy (I tried with leftover punjabi chicken). Now why I am calling it Double Trouble sandwich. That is because it has 2 types of Fillings; 2 types of spread and 2 types of seasonings.

Ingredients (2 servings)
- 4 medium size boiled potatoes.
- 8 slices of sandwich bread
- Leftover chicken gravy
- 3 Eggs
- Oregano
- Garlic Bread seasoning
- Burger Mayonnaise
- Classic Mayonnaise
- Powered Black Pepper
- Salt as per taste
- Red Chilli Flakes
- Carom Seeds
- Oil/butter/ ghee
Procedure
- Properly mash the boiled potatoes. To these mashed potatoes add 2 table spoons of classic mayonnaise, garlic bread seasoning, 1/4 th teaspoon carom seeds, Salt, 1/2 teaspoon black pepper powder and red chilli flakes. Mix it properly to get a proper Sandwich spread like paste.
- On one slice of bread (single side) apply generous amount of this potato spread. (Slice 1)
- In a non stick tawa spread some oil, and directly break open the egg on the tawa. Sprinkle some salt, black pepper powder and oregano on the egg. Let it cook on slow flame. Properly cook both the sides of this egg, by flipping each side. One’s prepared keep it aside.
- Next take the chicken gravy. Properly mince the leftover chicken. Remove any bone.
- On one bread slice apply this minced chicken gravy. (Slice 2)
- Over this slice of bread (slice 2) keep the bread slice with potato spread (slice 1). Potato spread should be facing the chicken gravy.
- Then on the other side of Slice 2, apply a generous amount of Burger mayonnaise.
- Over this burger Mayonnaise place the cooked egg omelette.
- On another slice of bread apply the remaining chicken gravy (Slice 3).
- Place this slice 3 on top of the egg. Make sure chicken gravy is towards inside.
- Heat up a non stick tawa and spread some butter or ghee and place the sandwich on it. And then slow down the gas flame.
- Let both sides of the sandwich get cooked properly to get the desired crispy sandwich.
