today i tried this mix veg recipe which was really yum and very easy to make.

Ingredients (servings for 4)
- 4 medium size ooty carrots (julienne cut)
- 1 bowl chopped french beans
- 1 bowl of chopped button mushrooms (chopped in four pieces each)
- 1/2 bowl of peas
- 2 medium size tomato, one medium size onion, 6-7 cloves garlic, 2 green chillies ( all the blend together for puree)
- 2 inches of grated ginger
- refined oil
- 1 tbsp garam masala
- 1 tbsp coriander powder
- 1/2 tbsp of cumin seeds
- 1/2 tbsp turmeric powder
- salt
- asafoetida pinch
- 1/4 tbsp red chilli powder
- 1/2 tbsp kasoori methi
- water
- 2 tbsp curd
- 1/2 tbsp mango pickle masala
Procedure
- put some refined oil in kadhai and deep fry mushrooms, followed by carrots, beans and peas, on medium flame.
- Frying mushroom will take little longer than other veggies as it first releases excess of water and when the released water gets evaporated only then they actually start frying.
- then in a non stick pan take 2 tbsp of refined oil and add cumin seeds. When they begin to sputter add onion tomato purée.
- add salt and grated ginger to this and a dash of water. let it cook on high flame for 2 minutes.
- then add turmeric, garam masala, coriander powder, asafoetida, red chilli.
- again add 2 tbsp of water, mix the spices and let it cook for 2 minutes.
- then add curd and stir it properly to avoid lumps. then add masala or base of mango pickle and 1 tbsp water and let it cook on medium flame for 2 minute.
- when the tadka starts releasing oil on the sides add the fried veggies and mix it properly.
- then add 1 cup water and let it cook on high flame for 2 minutes.
- cover the pan with lid and let it cook on low flame for 10 minutes.
- turn off the gas and sprinkle crushed kasoori methi.
- serve hot with roti, parantha.
