Sweet Vermicelli

There are different ways of cooking sweet vermicelli. Some people cook with milk and some without milk. Some cook with sugar, some in jaggery. I personally like all the varieties of sweet vermicelli. This time I prepared sweet vermicelli in sugar without milk. It is a very easy recipe.

Ingredients (servings for 4)

  • 1 cup of vermicelli
  • 3 cups of water
  • 2 tablespoon of desi ghee/clarified butter
  • Chopped almonds, cashews, raisins (1 tablespoon each)
  • 2 Crushed whole green cardamom
  • 50 grams sugar (as per your taste)

Procedure

  1. In a non stick pan take desi ghee and add vermicelli to it. Roast the vermicelli on medium flame till golden brown.
  2. Then shift the roasted vermicelli to the plate. 
  3. In the same non stick pan add water, crushed green cardamom, sugar and bring it to boil.
  4. Then add roasted vermicelli to the same.
  5. Let it cook on high flame for 5 minutes. Add dry fruits (cashews, almonds, pistachio, raisins etc.
  6. Cook for another 10 minutes on low flame till the 80-90% of the water is evaporated. 
  7. Garnish with dry fruits of your choice and

Note- to prepare vermicelli in jaggery powder, the procedure is same. All you need to do this replace 50 GM’s sugar with jaggery powder. The end result will be dark brown in color.
