i think have of the indian origin people across the world have one common favourite dish i.e. Rajma Chawal (rice). Every sunday afternoon dish is fixed to be rajma chawal. But what to do of the leftover rajma chawal. Very easy, just awake your experimental instincts and get ready for the sandwich.
Ingredients (servings for 2)
- 1 bowl of leftover rajma chawal (mixed)
- classic mayonnaise
- burger mayonnaise
- 2 green chillies (finely chopped)
- 1 small tomato (finely chopped)
- 1 small onion (finely chopped)
- 1 table spoon of finely chopped capsicum
- butter or ghee
- 3 eggs
- garlic bread seasoning/ oregano
- 6 bread slices (to make two sandwiches)
- salt
- black pepper powder
Procedure
- In a mixing bowl take cooked rajma rice and to this add 2 table spoon of classic mayonnaise. Keep this aside.
- Then take 3 Eggs and make omelette by adding chopped green chillies, onion, tomato, capsicum, salt, black pepper powder and garlic bread seasoning.
- Ones cooked divide it into half.
- Take 4 bread slices and apply burger mayonnaise on them.
- For making a Sandwich, take one bread slice with burger mayonnaise and spread the rajma rice stuffing on it.
- Then place a simple bread slice. On top of this slice place half omelette and keep the other half for second sandwich.
- While placing just make sure that omelette is properly placed in the sandwich. It should not be coming out from the sides. If that happens you can cut the extra omelette.
- Close the sandwich by placing the bread slice with burger mayonnaise on top.
- Put some butter on non stick tawa and cook the sandwich from both the sides.
